When life gives you meatballs, the obvious next step is to make meatball subs! And now, make them with a Swedish spin. Picture this: juicy meatballs snuggled up in a toasty bun, with crisp cucumbers and cranberry sauce (or, better yet, lingonberry sauce, for that authentic touch!). Don’t forget to spoon some gravy overtop and grab some napkins—things are about to get deliciously messy!   


Ingredients
Preparation
  1. In a large bowl, combine beef, breadcrumbs, and 2 tbsp seasoning. Form into 16 meatballs (about 2 tbsp each).   
  2. Add meatballs to Sauté Pan over medium heat. Cover and cook 10 min, flipping halfway.   
  3. In a medium bowl, combine remaining seasoning with water, milk, and soy sauce.   
  4. Remove meatballs from pan; set aside. Do not clean pan. Reduce heat to low and add seasoning mixture to pan. Stir constantly until mixture is thick, making sure to scrape up all the bits from the bottom of the pan. Return meatballs to pan and toss with gravy. 
  5. Thinly slice cucumber. Spread cranberry sauce over the inside of the buns, then add meatballs and cucumber. Spoon gravy overtop.  
Tips

We love preparing these subs with lots of cranberry sauce—about 2 tbsp per sandwich—but it's best to start with 1 tbsp and adjust as needed. 

This meal is a little high in sodium. If you're following the Epic Life program, choose lower sodium options the rest of the day.
